Description
Sodium benzoate is one of the strongest preservatives, it prevents the appearance of mold fungi, yeast, slows down oxidative reactions, and also inhibits the activity of enzymes that destroy fats and starch. Since sodium benzoate is not very effective against bacteria, it can be combined with potassium sorbate or lactic acid. The maximum dosage of sodium benzoate is 0.5%. Unlike many preservatives, sodium benzoate does not lose its properties when heated and in an acidic environment. Sodium benzoate is safe for humans and when used as a food additive and as a cosmetic component, but individual intolerance occurs in some cases.
